Caramel Dumplings – Vegan

These are the best winter treat and super easy to whip up. Seriously took me 20 minutes!

This recipe is inspired by LittleVeganBear’s recipe but I’ve changed some things.

Ingredients:

Sauce:

1/2 cup brown sugar/ coconut sugar

1 T golden syrup

2 T vegan butter (I used Nuttelex Buttery)

2 cups water

Dumplings:

1 cup self raising flour

1/4 cup vegan butter (Nuttelex Buttery)

pinch salt

4 T plant milk (I used coconut)

Method:

Put all sauce ingredients in a saucepan and bring to a simmer. Then, in a bowl rub the butter into flour and salt. Then add milk to bind together. Mix just enough to bind it, over mixing = less fluffy dumplings!

Softly roll into balls and drop into the sauce. Pop the lid on and simmer for 10-15 minutes then serve with ice cream. YUM!
